  • Begin by crushing the Nutter Butter cookies into fine crumbs, either using a food processor or by crushing them in a zip-top bag with a rolling pin.
  • In a large mixing bowl, combine the crushed Nutter Butter cookies, creamy peanut butter, and powdered sugar. Mix until they form a cohesive dough.
  • Scoop out small portions of the mixture and roll them into 1-inch balls, placing them on a lined baking sheet.
  • Refrigerate the truffles for about 30 minutes or until they are firm to the touch.
  • To prepare the chocolate coating, combine chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals until melted and smooth.
  • Dip each truffle into the melted chocolate using a fork, allowing excess chocolate to drip off before placing them back on the baking sheet.
