Step-by-Step Instructions for Mutton Masala

  • Heat 3 tablespoons of oil in a large pot over medium heat. Once shimmering, add 2 finely chopped onions and sauté until golden brown for 6-8 minutes.
  • Stir in 1 tablespoon of ginger-garlic paste and cook for 2-3 minutes until fragrant.
  • Add 2 chopped tomatoes and stir well, cooking for 5-7 minutes until softened.
  • Mix in 2 teaspoons of chili powder, 1 teaspoon of turmeric powder, 2 teaspoons of coriander powder, and 1 teaspoon of cumin powder. Cook for 3-4 minutes.
  • Add 1 pound of mutton and salt to taste, stir to coat well, and sear for 5 minutes.
  • Pour in ½ cup of water and bring to a boil for 2-3 minutes.
  • Reduce heat to low, cover, and simmer for 45-60 minutes.
  • Once tender, sprinkle 1 teaspoon of garam masala and mix gently.
  • Garnish with freshly chopped coriander leaves and serve hot with rice or naan.
