For the Base

  • 1 package Keto-friendly saltine crackers These give a satisfying crunch while keeping carbs low.
  • 1 cup Unsalted butter Adds richness and helps bind all flavors together.

For the Sweetener

  • 1 cup Granulated erythritol A perfect low-carb sugar substitute that doesn’t spike blood sugar levels.

For the Topping

  • 1 cup Sugar-free chocolate chips These melt beautifully and provide that decadent chocolate layer.
  • 1 cup Chopped nuts (walnuts, pecans, or almonds) Add a delightful crunch and additional flavor.
  • 1 teaspoon Sea salt A light sprinkle enhances the sweetness and balances flavors beautifully.

Instructions

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper and arrange the keto-friendly saltine crackers in a single layer.
  • Melt the unsalted butter in a medium saucepan over medium heat until smooth and bubbling, then add the granulated erythritol and stir until combined.
  • Allow the mixture to boil lightly for about 3 minutes without stirring.
  • Remove from heat and pour the hot toffee mixture evenly over the arranged saltine crackers, using a spatula to spread it gently.
  • Bake in the preheated oven for 5–7 minutes until bubbling and the edges are just beginning to brown.
  • Remove from the oven and sprinkle the sugar-free chocolate chips evenly over the hot toffee layer.
  • Spread the melted chocolate evenly over the toffee layer.
  • Sprinkle the chopped nuts over the chocolate layer and finish with a light sprinkle of sea salt.
  • Allow to cool completely at room temperature for about 30 minutes, or refrigerate for faster cooling.
  • Once set, break into bite-sized pieces and store in an airtight container at room temperature.

Notes

Choose quality keto-friendly saltine crackers for the best results. Do not rush the boiling stage for rich toffee flavor. Keep an eye on the toffee while baking to prevent burning.
