For the Beef Base

  • 2 pounds Beef chuck roast cut into one-inch cubes
  • 2 tablespoons Vegetable oil

For the Aromatics

  • 1 large Onion chopped
  • 3 cloves Garlic minced

For the Spice Blend

  • 3 tablespoons Chili powder
  • 2 teaspoons Ground cumin
  • 2 teaspoons Smoked paprika
  • 2 teaspoons Dried oregano
  • 1 teaspoon Cayenne pepper adjust for heat
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

For the Liquid Ingredients

  • 1 cup Enchilada sauce
  • 2 cups Beef broth

For the Hearty Fillers

  • 1 can Diced green chiles drained
  • 1 can Kidney beans drained and rinsed
  • 1 can Pinto beans drained and rinsed
  • 2 tablespoons Tomato paste

For Thickening

  • 2 teaspoons Cornstarch
  • 2 tablespoons Water

Step‑by‑Step Instructions

  • Start by heating 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Season the beef chuck roast cubes with salt and black pepper, then sear them in batches for about 3-5 minutes until browned on all sides.
  • Once the beef cubes are perfectly seared, transfer them into your crockpot.
  • In the same skillet, add the chopped onion and minced garlic. Sauté over medium heat for about 3-4 minutes until softened and translucent.
  • Stir in the chili powder, ground cumin, smoked paprika, dried oregano, and cayenne pepper into the skillet. Cook for an additional minute to toast the spices.
  • Pour in the enchilada sauce, beef broth, diced green chiles, and tomato paste into the crockpot. Stir well to combine.
  • Gently fold in the drained and rinsed kidney beans and pinto beans into the crockpot mixture.
  • Cover the crockpot and set it to cook on low for 7 to 8 hours, or on high for 4 hours.
  • Prepare a cornstarch slurry by mixing 2 teaspoons of cornstarch with 2 tablespoons of water in a small bowl. Stir this mixture into the chili to thicken it up.
  • Cook the chili on high for an additional 15 minutes after adding the cornstarch slurry.
  • Once thickened, give your Hearty Crockpot Chili Colorado a final stir, and it’s ready to be served!
