Step-by-Step Instructions

  • Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Season 2 pounds of beef cubes with salt and pepper, then sear in batches until browned on all sides, about 3-4 minutes per side. Remove the beef and set aside, keeping the drippings in the pot.
  • In the same pot, add 1 cup of chopped onion, 1 cup of chopped carrots, and 1 cup of chopped celery. Cook over medium heat for 5-7 minutes until softened. Stir in 5 cloves of minced garlic and cook for an additional minute.
  • Pour in 1 cup of red wine, scrape the pot to release browned bits, and let it simmer for 2-3 minutes.
  • Return the browned beef to the pot and add 2 cups of beef broth, 1 can of diced tomatoes, 1 teaspoon of oregano, and 1 teaspoon of thyme. Stir, bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours.
  • While the beef is braising, boil salted water and cook 12 ounces of pasta until al dente, about 8-10 minutes. Drain and set aside.
  • Once the beef is tender and sauce thickened, taste and adjust seasoning. Stir in the cooked pasta until well coated.
  • Plate the Braised Beef Pasta and top with grated Parmesan and chopped parsley for an elegant presentation.
