  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs

  • 1 cup Biscoff cookie butter

  • Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9x13 inch baking pan.
  • In a large mixing bowl, combine 1 cup of melted unsalted butter, 1 cup of packed brown sugar, and ½ cup of granulated sugar. Mix until smooth and creamy.
  • Add 2 large eggs one at a time and whisk until fully incorporated. Stir in 1 tablespoon of vanilla extract.
  • In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ¼ teaspoon of salt.
  • Gradually add the dry mixture to the wet ingredients using a spatula. Mix gently until just combined.
  • Fold in 1 cup of Biscoff cookie butter gently until smooth.
  • Fold in ½ cup of crushed Biscoff cookies.
  • Pour the batter into the prepared baking pan and sprinkle the reserved crushed Biscoff cookies over the top.
  • Bake for 25-30 minutes, until a toothpick inserted in the center comes out mostly clean.
  • Sprinkle a pinch of sea salt on top while warm.
  • Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before cutting into squares.
