Ingredients
  

For the Bake

  • 2 large Sweet Potatoes peeled and cubed
  • 1 pound Ground Turkey lean
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 Bell Pepper diced (any color)
  • 1 can (15 oz) Black Beans drained and rinsed
  • 1 can (14.5 oz) Diced Tomatoes with juice
  • 1 cup Corn frozen or canned

For the Seasoning

  • 1 tablespoon Olive Oil for sautéing
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • Salt and Pepper to taste

For the Topping (Optional)

  • 1 cup Cheddar Cheese shredded
  • Fresh Cilantro for garnish

Instructions
 

Steps

  • Preheat your oven to 400°F (200°C).
  • In a large pot, bring water to a boil and add a pinch of salt. Cook the cubed sweet potatoes for about 10-15 minutes until tender.
  • In a large skillet, heat olive oil over medium heat, sauté diced onion for 3-4 minutes, then add minced garlic and cook for another 2-3 minutes.
  • Add diced bell pepper to the skillet and cook for 2-3 minutes. Push aside, add ground turkey, and cook until browned, about 5-7 minutes.
  • Stir in paprika, cumin, chili powder, salt, and pepper, mixing until combined.
  • Add black beans, diced tomatoes, and corn, stirring and simmering for 5 minutes.
  • Layer cooked sweet potatoes in a baking dish, then pour the turkey mixture evenly on top.
  • Optional: Sprinkle shredded cheddar cheese on top of the turkey mixture.
  • Cover with foil and bake for 25 minutes. Remove foil and continue baking for 10-15 minutes until cheese is bubbly and golden.
  • Garnish with fresh cilantro before serving.

Notes

This bake stores well in the fridge for up to 3 days or can be frozen for up to 3 months.
