  • 2 pounds beef shank or chuck roast cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 2 cups zucchini sliced
  • 1 cup corn kernels fresh or frozen
  • 1 large tomato chopped
  • 1 cup jalapeño peppers optional, chopped

For the Broth

  • 8 cups beef broth or water
  • 1 tablespoon salt adjust to taste
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon oregano

For Serving

  • 1 cup fresh cilantro for garnish
  • 2 pieces lime wedges for serving

Cooking Steps

  • In a large pot, heat vegetable oil over medium-high heat. Add beef and sear until browned on all sides, about 5-7 minutes.
  • Add onion and garlic, and sauté for 5 minutes until the onion is translucent.
  • Stir in carrots, potatoes, zucchini, corn, and tomato. Cook for 5 minutes.
  • Pour in beef broth, ensuring everything is submerged. Bring to a gentle boil.
  • Add salt, black pepper, cumin, and oregano. Stir well.
  • Reduce heat and cover. Simmer for 1 hour.
  • Stir in jalapeños during the last 10 minutes of cooking if using.
  • Taste and adjust seasoning if necessary.
  • Serve warm in bowls, garnishing with cilantro and lime wedges.
