  • 1 tablespoon cornstarch for light crust
  • 1 teaspoon sesame oil imparts nutty flavor

For the Spring Rolls

  • 8 pieces spring roll wrappers for wrapping shrimp
  • 1 cup water for sealing wrappers

For Serving

  • 1 cup sweet chili sauce for dipping

Step-by-Step Instructions

  • In a bowl, combine cooking oil, soy sauce, and minced garlic. Add medium-sized shrimp, cornstarch, and sesame oil. Marinate for 10 minutes.
  • Lay out a spring roll wrapper. Place 1-2 marinated shrimp at the bottom corner, fold sides inward, and roll tightly. Seal edges with water.
  • Heat oil in a deep pan until it reaches 375°F (190°C).
  • Fry wrapped shrimp in hot oil for 2-3 minutes per side, until golden brown and crispy.
  • Remove from oil and drain on paper towels. Serve immediately with sweet chili sauce.

Notes

Best served immediately after frying for maximum crispiness. Can experiment with different dipping sauces.
