Equipment

  • 9x13-inch baking dish
  • Mixing bowl
  • Whisk

Ingredients

For the Bread Pudding

  • 4 cups eggnog or substitute with heavy cream
  • 4 large eggs
  • 1 cup granulated sugar or use brown sugar for deeper flavor
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg freshly grated for best flavor
  • ¼ teaspoon salt
  • cinnamon swirl bread cubed

For Optional Mix-ins

  • ½ cup raisins or dried cranberries or swap with chopped apple
  • ½ cup chopped pecans or walnuts or try almonds or pistachios

For Finishing Touches

  • 2 tablespoons unsalted butter melted
  • powdered sugar for dusting

Instructions

Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish with unsalted butter or cooking spray.
  • In a large mixing bowl, combine eggnog, large eggs, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt. Whisk until fully incorporated to create a creamy custard mixture.
  • Place cubed cinnamon swirl bread into the prepared baking dish, then sprinkle raisins or nuts over the bread cubes if desired.
  • Pour the eggnog mixture evenly over the bread cubes, gently pressing down with a spatula to help soak.
  • Drizzle melted unsalted butter over the top of the mixture to add richness and help create a crispy top while baking.
  • Let the mixture sit for about 10-15 minutes to allow the bread to soak up the custard.
  • Bake in the preheated oven for 40-45 minutes, until the top is golden brown and a knife inserted comes out clean.
  • Remove from the oven and allow to cool for 10 minutes before serving.
  • Serve warm, dusted with powdered sugar, and enjoy with extra eggnog or a dollop of whipped cream.

Notes

Use fresh cinnamon swirl bread for the best texture; stale bread absorbs the liquid better. Allow soaking time for optimal texture.
