Step-by-Step Instructions

  • In a small mixing bowl, combine 2 tablespoons of apple cider vinegar, 2 tablespoons of honey, and 1 teaspoon of Dijon mustard. Whisk together until smooth and well blended, approximately 1–2 minutes.
  • While continually whisking, slowly drizzle in ¼ cup of extra virgin olive oil. Taste the mixture and season with salt and freshly ground black pepper.
  • In a large salad bowl, add 6 cups of washed and dried fresh arugula and 2 ripe pears thinly sliced. Gently toss the arugula and pear slices together for about a minute.
  • Drizzle half of the prepared honey vinaigrette over the arugula and pear mixture. Toss gently for about 30 seconds.
  • Sprinkle ½ cup of crumbled goat cheese, ½ cup of toasted walnuts, and ¼ cup of dried cranberries over the dressed salad.
  • Give the salad a final gentle toss for about 30 seconds to incorporate the toppings with the salad. Taste and adjust seasoning if needed.
