Equipment

  • food processor

Ingredients

For the Base

  • 1 cup pitted dates finely chopped
  • 1 cup walnuts chopped
  • ½ cup shredded coconut
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¼ cup almond butter or any nut butter
  • 1 tablespoon honey or maple syrup optional for extra sweetness

For the Chocolate Coating

  • ½ cup dark chocolate chips optional for coating

Instructions

Preparation Steps

  • Process the Dates: Place 1 cup of finely chopped pitted dates into your food processor. Pulse until smooth and sticky, about 2 minutes.
  • Add the Dry Ingredients: Add walnuts, shredded coconut, cocoa powder, vanilla extract, sea salt, and optional sweetener. Pulse for 1-2 minutes until well integrated.
  • Form the Dough: Continue pulsing until a thick, sticky dough forms, about 1-2 minutes. Ensure the mixture holds together.
  • Incorporate the Almond Butter: Add ¼ cup of almond butter and pulse for another 30 seconds until fully incorporated.
  • Shape the Balls: Roll the mixture into bite-sized balls, around 1 inch in diameter. This should take about 5-10 minutes.
  • Coat with Coconut: Roll each ball in shredded coconut and place them on a baking sheet lined with parchment paper.
  • Melt the Chocolate: For optional coating, melt dark chocolate chips in 30-second intervals until smooth, about 1-2 minutes.
  • Dip the Chocolate Balls: Dip coconut-coated balls halfway into the melted chocolate, allowing excess to drip off.
  • Chill to Set: Refrigerate for at least 30 minutes to allow the chocolate to set and flavors to meld.
  • Serve and Enjoy: Serve chilled or at room temperature. These treats are perfect for sharing or enjoying solo.

Notes

Use fresh, moist dates for the best texture and customize with other nuts if desired. Don't skip the refrigeration step as it helps firm up the balls.
