  • 2 cups mashed potatoes leftover or freshly made
  • 1 cup shredded cheese any melting cheese works well
  • 1 large egg acts as a binder
  • ½ cup all-purpose flour substitute with gluten-free flour if needed

For Flavoring

  • ¼ cup green onions chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

For Frying

  • ½ cup oil canola or vegetable oil

Preparation Steps

  • In a large mixing bowl, combine the mashed potatoes, shredded cheese, egg, flour, green onions, garlic powder, and salt.
  • Use a spatula or spoon to blend all ingredients until smooth and uniform, then set aside for about 5 minutes.
  • Form the mixture into balls or small puffs, roughly the size of a golf ball.
  • Heat oil in a frying pan to cover the bottom about ½ inch deep.
  • Test the oil temperature by dropping a small piece of the mixture in; it should sizzle.
  • Carefully add the puffs to the oil and fry each side for 3-4 minutes until golden brown.
  • Remove from the oil and let them drain on a paper towel-lined plate.
