Preparation Steps

  • Start by finely shredding 2 cups of fresh cabbage, sprinkle with ½ teaspoon of salt, and let it rest for about 10 minutes.
  • Squeeze cabbage to remove excess moisture after the resting period.
  • In a separate bowl, whisk together 2 large eggs and ¼ cup of water until well combined.
  • In another mixing bowl, combine ½ cup of all-purpose flour, ¼ cup of cornmeal, ¼ teaspoon of black pepper, ¼ teaspoon of garlic powder, and ¼ teaspoon of onion powder.
  • Gradually incorporate dry mixture into the egg mixture, stirring just until combined.
  • Fold the squeezed cabbage into the batter.
  • Heat a skillet over medium heat and add 1 tablespoon of vegetable oil.
  • Drop ¼ cup of the cabbage batter onto the skillet and cook for 3-4 minutes until golden brown, then flip and cook the other side for another 3-4 minutes.
  • Remove pancake from skillet and place on paper towels to drain excess oil.
  • Serve hot with your favorite dipping sauce or toppings.
