Ingredients
  

For the Noodles

  • 12 oz Udon noodles chewy, delicious noodles

For the Sauce

  • 1 tablespoon Soy sauce adds essential salty umami flavor
  • 1 tablespoon Mirin or substitute with rice vinegar mixed with a touch of sugar
  • 1 tablespoon Oyster sauce enriches the dish
  • 1 teaspoon Sesame oil brings a lovely nutty fragrance
  • 1 teaspoon Chili flakes optional, for heat

For the Vegetables

  • 2 tablespoons Vegetable oil for stir-frying
  • 1 cup Mixed vegetables such as bell pepper, carrot, and broccoli
  • 2 Green onions sliced, for garnish

Cooking Instructions

  • Bring a large pot of water to a boil, add udon noodles, and cook according to the package instructions (8-10 minutes). Drain and rinse with cold water.
  • In a large pan or wok, heat vegetable oil over medium heat until shimmering.
  • Add mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.
  • Gently add the cooked noodles to the pan and combine everything.
  • Pour in soy sauce, mirin, oyster sauce, and sesame oil. Add chili flakes if desired, and stir for 2-3 minutes.
  • Toss in sliced green onions and stir for another minute before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in a skillet with a splash of water or soy sauce.
