  • Preheat your oven to 375°F (190°C). In a mixing bowl, combine ricotta cheese, egg, dried basil, and dried oregano; mix until smooth.
  • Spread a thin layer of marinara sauce at the bottom of a deep baking dish.
  • Layer cooked lasagna noodles evenly over the sauce.
  • Spread half of the ricotta mixture over the noodles evenly.
  • Layer on zucchini, bell pepper, and spinach evenly over the ricotta mixture.
  • Pour marinara sauce over the veggies and sprinkle mozzarella cheese on top.
  • Repeat the layering process with the remaining ingredients, finishing with a layer of noodles, marinara sauce, and mozzarella.
  • Cover with foil and bake in the preheated oven for 30 minutes.
  • Remove foil and bake for an additional 15 minutes until golden brown.
  • Allow the lasagna to cool for a few minutes before slicing and serving.

Notes
