For the Pie Crust

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet and sauté the onion until translucent.
  • Add minced garlic and stir for another minute.
  • Add spinach and cook until wilted, about 3-4 minutes.
  • In a bowl, combine ricotta, feta, Parmesan, and eggs until well mixed.
  • Mix cooled spinach and onion with the cheese blend, adding nutmeg, salt, pepper, and dill.
  • Roll out the pie crust and place it in a pie dish.
  • Fill the crust with the spinach and cheese mixture.
  • Cover with a second crust, seal edges, and cut slits for steam.
  • Brush with beaten egg for a golden finish.
  • Bake for 35-40 minutes until golden brown.
  • Let cool for 10 minutes before serving.
