Step-by-Step Instructions

  • In a large skillet, heat olive oil over medium heat until shimmering. Add chopped onion and sauté for about 5 minutes until translucent. Stir in minced garlic and cook for an additional 30 seconds.
  • Add chopped spinach to the skillet. Cook, stirring occasionally, for 2-3 minutes until wilted. Remove from heat and let cool slightly.
  • In a mixing bowl, combine the cooled spinach mixture with ricotta cheese, feta cheese, salt, black pepper, and nutmeg. Mix until well incorporated.
  • Preheat your oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface and cut into 3-inch squares or circles.
  • Place a spoonful of the spinach mixture in the center of each pastry. Fold over to create a triangle or fold circles in half. Seal edges with a fork.
  • Brush the tops of each filled pastry with beaten egg to give a golden color when baked.
  • Arrange puffs on a baking sheet lined with parchment paper. Bake for 15-20 minutes until golden brown.
  • Let cool slightly before serving warm.
