Ingredients
  

For the Rice

  • 1 cup white rice rinsed

For the Shrimp

  • 1 pound large shrimp deveined and peeled

For the Spicy Mayo

  • ¼ cup mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • to taste salt
  • to taste pepper

For Garnish

  • 2 tablespoons green onions chopped
  • 1 tablespoon sesame seeds sprinkled
  • 1 lime lime wedges for squeezing

Preparation Steps

  • Rinse the rice in a fine-mesh strainer under cold water for 2 minutes.
  • Cook the rinsed rice with 2 cups of water in a saucepan, bring to boil, then simmer for 18-20 minutes.
  • Let the rice rest covered for 5 minutes, then fluff with a fork.
  • Whisk together the mayonnaise, Sriracha, soy sauce, sesame oil, garlic powder, and paprika in a bowl.
  • Heat a skillet and cook the shrimp for 2-3 minutes on each side until pink and opaque.
  • Divide rice in bowls and top with shrimp.
  • Drizzle the spicy mayo over the shrimp and rice.
  • Garnish with green onions, sesame seeds, and lime wedges.
