  • 2 tablespoons Sesame oil
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey

  • 1 can Chickpeas drained and rinsed
  • 1 cup Cherry tomatoes halved
  • 4 cups Mixed salad greens
  • 1 cup Cucumber thinly sliced
  • ½ cup Red onion thinly sliced

For the Dressing

  • ¼ cup Extra virgin olive oil
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Ginger freshly grated
  • 1 clove Garlic minced
  • 2 tablespoons Toasted sesame seeds

Step-by-Step Instructions

  • Preheat your grill or a grill pan over medium-high heat for about 5 minutes.
  • In a small bowl, whisk together the sesame oil, soy sauce, honey, salt, and pepper until combined.
  • Brush the chicken breasts with the marinade and allow to marinate for at least 10 minutes.
  • Place the chicken on the grill and cook for 6-7 minutes on each side until thoroughly cooked.
  • Let the chicken rest for 5 minutes before slicing into strips.
  • In a large salad bowl, combine chickpeas, cherry tomatoes, salad greens, cucumber, and red onion. Toss gently.
  • In a small bowl, whisk together olive oil, rice vinegar, ginger, garlic, and salt.
  • Pour the dressing over the salad and toss to combine.
  • Top with sliced grilled chicken and sprinkle with toasted sesame seeds.
  • Serve immediately for the best flavor and presentation.
