Ingredients
  

For the Vegetables

  • 1 pound Brussels sprouts
  • 3 medium Carrots
  • 2 medium Parsnips
  • 1 large Red onion
  • 2 medium Sweet potatoes

For the Seasoning

  • ¼ cup Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 cloves Garlic minced
  • 1 tablespoon Balsamic vinegar

For Garnish

  • 2 tablespoons Fresh parsley chopped

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Wash, peel, and cut the Brussels sprouts, carrots, parsnips, red onion, and sweet potatoes into uniform sizes.
  • In a small bowl, whisk together olive oil, dried thyme, dried rosemary, minced garlic, balsamic vinegar, salt, and pepper.
  • Pour the olive oil mixture over the vegetables and toss to coat evenly.
  • Spread the vegetables in a single layer on the baking sheet.
  • Roast in the oven for about 25–30 minutes, stirring halfway through.
  • Let them cool for a couple of minutes, then garnish with chopped parsley before serving warm.

Notes

For best results, ensure vegetables are cut evenly and avoid overcrowding the baking sheet to achieve perfect roasting.
