  • 4 corn tortillas cut into strips
  • 1 cup enchilada sauce Opt for homemade if possible.
  • 1 cup cheddar cheese Shredded.
  • 1 cup Monterey Jack cheese Shredded.

  • ¼ cup fresh cilantro Chopped.

Step-by-Step Instructions

  • Heat a large skillet over medium heat, adding ground beef along with salt, pepper, chili powder, and cumin. Break up the meat as it cooks for about 5-7 minutes.
  • In the same skillet, add chopped onion, green bell pepper, and red bell pepper. Sauté for about 5 minutes. Add minced garlic and cook for another 30 seconds.
  • Return the cooked ground beef to the skillet, mix in corn tortilla strips and pour in enchilada sauce. Stir gently until coated.
  • Sprinkle cheddar and Monterey Jack cheese over the mixture. Cover and cook on low for 5-7 minutes until the cheese is melted.
  • Remove from heat, garnish with chopped cilantro, and serve hot.
