  • Start by rinsing jasmine rice under cold water until the water runs clear. In a medium saucepan, bring low-sodium chicken broth to a rolling boil, then add the rinsed rice and simmer for 15-20 minutes.
  • Fluff the rice gently and stir in grated Parmesan cheese, garlic powder, and olive oil to create a creamy texture. Keep warm.
  • Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat, then add the chicken and cook until golden brown.
  • In the same skillet, add minced garlic and red pepper flakes. Sauté for 1 minute until fragrant.
  • Pour in white wine, scraping the bottom of the skillet to lift browned bits, and let simmer for 1-2 minutes.
  • Add lemon juice and chicken broth to the skillet, and simmer for 3-4 minutes to meld flavors.
  • Return the chicken to the skillet and stir in unsalted butter until melted, then let heat through.
  • Serve the rice on each plate, topped with the Chicken Scampi mixture, and garnish with fresh parsley.

Notes
