Ingredients
  

For the Salad

  • 2 cups mixed salad greens such as arugula, spinach, or romaine
  • 1 cup cooked chicken breast diced
  • ½ cup dried cranberries
  • ½ cup feta cheese crumbled
  • ¼ cup chopped pecans or walnuts
  • 1 medium apple diced, preferably Granny Smith
  • ½ red onion thinly sliced

For the Dressing

  • ¼ cup balsamic vinaigrette to drizzle over the salad

Preparation Steps

  • Wash and dry the mixed salad greens, then place them in a large salad bowl.
  • Cook a chicken breast in a skillet over medium heat for about 8-10 minutes, until internal temperature reaches 165°F. Allow cooling, then dice.
  • Dice the apple and set aside.
  • Thinly slice the red onion and add to the bowl.
  • Add the dried cranberries and chopped nuts to the salad bowl.
  • Crumble the feta cheese over the salad.
  • Drizzle with balsamic vinaigrette and toss gently.
  • Taste and adjust seasoning as needed.
  • Serve immediately or refrigerate for up to 30 minutes.

Notes

For best results, prepare salad just before serving and keep dressing separate until ready to eat.
