  • 4 large eggs for scrambling
  • 1 cup black beans rinsed and drained
  • 0.5 cup salsa of your choice
  • 0.25 cup cilantro chopped
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste

  • 1 medium jalapeños sliced
  • 0.5 cup corn salsa

  • Crack 4 large eggs into a bowl and whisk until well combined. Heat a non-stick skillet over medium heat and pour in the beaten eggs. Stir gently with a spatula for about 5 minutes until the eggs are fluffy and just set, then remove from heat.
  • In a small saucepan, add 1 cup of rinsed black beans and heat over medium-low heat for about 4–5 minutes until warmed through, then remove from stovetop.
  • In a large mixing bowl, add the scrambled eggs and black beans. Stir in ½ cup of salsa to create the base of your Breakfast Burrito Bowl.
  • Add ¼ cup of chopped cilantro, 1 tablespoon of lime juice, 1 teaspoon of cumin, and 1 teaspoon of salt to the bowl. Mix thoroughly until combined.
  • Spoon the mixture into bowls and top with jalapeños, corn salsa, or hot sauce according to your preference.
