  • Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic. Sauté for about 3–4 minutes until the onion turns translucent.
  • Stir in the chopped bell pepper and cook for another 2–3 minutes until slightly softened.
  • Add the diced tomatoes, paprika, and cumin. Cook for 5 minutes, stirring occasionally.
  • Pour in the coconut milk, stirring to combine, then bring to a gentle simmer for about 2 minutes.
  • Carefully add the fish chunks, season with salt and pepper, and let simmer gently for 10–15 minutes until cooked.
  • Remove from heat and garnish with fresh cilantro. Serve hot, ideally with steamed rice or crusty bread.
