Preparation Steps

  • Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
  • In a clean mixing bowl, combine the egg whites, cream of tartar, and salt. Beat on medium speed until frothy.
  • Increase mixer speed to high and gradually add the granulated sugar, continuing to whip until it holds stiff peaks and is glossy.
  • Gently fold in the peppermint extract with a spatula.
  • Transfer the meringue mixture into a piping bag and pipe small mounds onto baking sheets.
  • Bake for 1.5 to 2 hours until completely dry.
  • Turn off the oven and let the meringues cool inside for at least 1 hour.
  • Melt the chocolate chips in a microwave-safe bowl, stirring until smooth. Add oil for a thinner consistency if desired.
  • Drizzle the melted chocolate over cooled meringues and sprinkle with crushed peppermint candies.
  • Allow the chocolate to set before serving.
