  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together 2 cups of all-purpose flour, ½ teaspoon of baking soda, and ½ teaspoon of salt.
  • In a large mixing bowl, beat ¾ cup of softened unsalted butter with 1 cup of granulated sugar and ¼ cup of packed brown sugar until light and fluffy.
  • Add 1 large egg and 2 teaspoons of vanilla extract to the butter mixture and beat until fully combined.
  • Gradually add the flour mixture to the wet ingredients, mixing on low speed until just incorporated.
  • In a small saucepan, heat ½ cup of heavy cream over medium heat until bubbling, then remove from heat and whisk in 1 tablespoon of cornstarch.
  • Allow the cream mixture to cool slightly, then fold it into the cookie dough until well combined.
  • Drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
