For the Salad

  • 2 cups shelled edamame fresh or frozen
  • 1 medium red bell pepper diced
  • 1 cup shredded carrots pre-shredded optional
  • 1 medium cucumber diced
  • 2 cups shredded red cabbage
  • 3 medium green onions sliced
  • ¼ cup fresh cilantro chopped

For the Dressing

  • ¼ cup rice vinegar
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or agave syrup
  • 1 tablespoon fresh ginger grated
  • 1 clove minced garlic

For the Topping

  • 2 tablespoons toasted sesame seeds

Step-by-Step Instructions

  • Prepare the edamame by boiling a pot of water. Cook frozen edamame for about 5 minutes, fresh for 3-4 minutes. Drain and rinse under cold water before setting aside.
  • In a large mixing bowl, combine the cooled edamame, red bell pepper, shredded carrots, cucumber, red cabbage, green onions, and cilantro. Gently mix with a spatula to combine.
  • In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic until smooth.
  • Pour the dressing over the salad and toss gently to coat all the ingredients well.
  • Sprinkle toasted sesame seeds on top and give another gentle toss. Adjust seasoning with salt and pepper if necessary.
  • Let the salad marinate for at least 15 minutes at room temperature before serving.

Notes

For extra crunch, consider adding unsalted roasted peanuts or cashews. Store leftovers in an airtight container for up to 2 days.
