Step-by-Step Instructions

  • Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  • Slice medium potatoes into thin rounds, about ⅛ inch thick, and set aside.
  • In a large mixing bowl, combine the sliced potatoes with olive oil, salt, black pepper, smoked paprika, garlic powder, onion powder, and optional cayenne pepper. Toss until well-coated.
  • Stack the seasoned potato slices in small towers of 5-6 slices high on the prepared baking sheet.
  • Bake for 25-30 minutes, until the edges are golden brown and crispy.
  • Remove from the oven and sprinkle shredded cheddar cheese over each potato stack. Return to the oven for an additional 5-7 minutes until cheese is melted.
