Step‑by‑Step Instructions

  • Preheat your oven to 425°F (220°C) and place a baking sheet inside to warm.
  • Wash and scrub the baby potatoes, halve them for quicker cooking, and dry them with a towel.
  • In a bowl, whisk together Dijon mustard, whole-grain mustard, olive oil, garlic, salt, black pepper, paprika, thyme, rosemary, onion powder, honey, and lemon juice.
  • Add the potatoes to the mustard mixture and toss until coated.
  • Let the potatoes marinate in the mixture for about 5-10 minutes.
  • Remove the hot baking sheet from the oven and add a little olive oil to prevent sticking.
  • Spread the marinated potatoes on the hot baking sheet in a single layer.
  • Roast the potatoes for 20 minutes without stirring.
  • After 20 minutes, flip the potatoes and roast for an additional 15-20 minutes until golden brown and crispy.
  • Remove and sprinkle with flaky sea salt and fresh parsley before serving.
  • Serve hot with lemon wedges.
