  • 1 pound fresh crab meat using high-quality crab meat for richness

  • 10 pieces egg roll wrappers choose sturdy wrappers
  • 2 cups oil for frying use neutral oil like canola

Preparation Steps

  • In a large mixing bowl, combine the fresh crab meat, breadcrumbs, eggs, mayonnaise, Worcestershire sauce, chopped green onions, Old Bay seasoning, salt, and black pepper. Mix gently until well incorporated.
  • Lay an egg roll wrapper on a clean surface, place a generous spoonful of the crab mixture in the center, fold the bottom corner over the filling, and roll tightly, sealing the edge with water.
  • In a deep pan or large skillet, heat oil over medium-high heat until it reaches around 350°F (175°C).
  • Carefully lower the egg rolls into the hot oil in small batches, frying for about 3-4 minutes until golden brown and crispy. Use a slotted spoon to remove them.
  • Transfer the cooked egg rolls to a plate lined with paper towels to absorb excess oil and serve with your favorite dipping sauces.

Notes

Serve with dipping sauces like tangy tartar or zesty remoulade. Fresh crab meat significantly enhances flavor.
