  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika

  • Preheat the oven to 400°F (200°C).
  • In a medium pot, bring water to a rolling boil, add diced potatoes and cook for about 10 minutes. Add broccoli florets for an additional 3 minutes, then drain.
  • In a large mixing bowl, mash the drained potatoes and broccoli until combined but slightly chunky.
  • Mix in parmesan cheese, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and paprika. Stir thoroughly.
  • Form small bites (about 1 inch) and place on a lined baking sheet, spaced apart.
  • Lightly spray or drizzle tops with olive oil.
  • Bake for 20-25 minutes until golden brown and crispy.
  • Cool for a few minutes before serving warm.

Notes

Ensure your mashed mixture is slightly chunky for a hearty texture. Space bites on the baking sheet for even cooking.
