Ingredients
  

For the Filling

  • 2 cups cooked chicken, shredded
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels frozen or fresh
  • 1 cup bell pepper, diced any color
  • 1 medium red onion, finely chopped
  • 1 cup shredded cheese cheddar or pepper jack
  • 2 tablespoons taco seasoning
  • ¼ cup fresh cilantro, chopped
  • 20 wrappers eggroll wrappers
  • 1 large egg, beaten for sealing

For Baking

  • 2 tablespoons cooking spray or olive oil for a crispy finish

For the Spicy Dipping Sauce

  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 tablespoons lime juice freshly squeezed
  • 1-2 tablespoons hot sauce to taste
  • 1 teaspoon chili powder
  • to taste salt and pepper

Cooking Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the shredded cooked chicken, black beans, corn, diced bell pepper, finely chopped red onion, shredded cheese, taco seasoning, and chopped cilantro.
  • Take one eggroll wrapper and lay it on a clean surface, then spoon about 2-3 tablespoons of your filling mixture.
  • Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly, sealing the edge with beaten egg.
  • Place filled eggrolls seam-side down on the baking sheet and lightly spray the tops with cooking spray or brush with olive oil.
  • Bake for 15-20 minutes, flipping halfway through until golden brown.
  • In a small bowl, mix sour cream, mayonnaise, lime juice, hot sauce, chili powder, salt, and pepper until smooth.
  • Serve warm with the dipping sauce once the eggrolls are crispy and golden.

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to 3 days in the fridge or frozen for longer use.
