Ingredients
  

For the Eggroll Filling

  • 2 cups shredded chicken cooked
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels frozen or fresh
  • 1 medium bell pepper diced
  • ½ medium red onion finely chopped
  • 1 cup shredded cheese cheddar or pepper jack
  • 1 tablespoon taco seasoning
  • ¼ cup fresh cilantro chopped
  • 20 pieces eggroll wrappers
  • 1 large egg beaten for sealing
  • as needed cooking spray or olive oil for a crispy finish

For the Spicy Dipping Sauce

  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 tablespoon lime juice fresh
  • to taste hot sauce
  • 1 teaspoon chili powder
  • to taste salt
  • to taste pepper

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the shredded chicken, black beans, corn, diced bell pepper, chopped red onion, shredded cheese, taco seasoning, and fresh cilantro. Stir well for 2-3 minutes.
  • Place an eggroll wrapper on a surface, spoon about 2-3 tablespoons of the filling onto the wrapper, and fold the bottom corner over the filling.
  • Tuck in the side corners and roll the wrapper tightly towards the top corner, sealing with a little beaten egg.
  • Place the filled eggrolls seam-side down on the prepared baking sheet and lightly spray the tops with cooking spray.
  • Bake for 15-20 minutes, flipping halfway through for even browning.
  • In a small bowl, combine the sour cream, mayonnaise, lime juice, hot sauce, chili powder, salt, and pepper. Mix until smooth.
  • Once baked, let the eggrolls cool for a few minutes and serve with the spicy dipping sauce.

Notes

Store leftovers in an airtight container for up to 3 days. Freeze uncooked eggrolls for longer storage.
