  • 1 can coconut milk
  • 1 tablespoon oil coconut or olive
  • 1 medium onion chopped
  • 3 cloves minced garlic
  • 1 tablespoon ginger minced

For Flavor Boost

  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice freshly squeezed

For the Garnish

  • ¼ cup fresh cilantro chopped

Cooking Instructions

  • Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Sauté for about 5 minutes until translucent.
  • Add red curry paste, stirring to coat the onion mixture and cook for an additional minute.
  • Stir in lentils, vegetable broth, and coconut milk. Mix thoroughly.
  • Bring to a boil, then reduce heat and let simmer uncovered for 20-25 minutes, stirring occasionally.
  • Once lentils are tender, stir in soy sauce and lime juice. Season with salt and pepper to taste.
  • Serve warm, garnished with fresh cilantro.

Notes

Rinse red lentils before adding to the soup. Adjust the spice level to your preference.
