Step-by-Step Instructions

  • In a medium bowl, crack four large eggs and add two tablespoons of white miso paste along with two tablespoons of milk. Whisk until smooth and uniform.
  • Place a nonstick skillet over low heat. Add one tablespoon of unsalted butter and one teaspoon of vegetable oil. Allow the butter to melt slowly.
  • Once your butter is melted and foamy, carefully pour the whisked egg mixture into the skillet.
  • Using a silicone spatula, gently stir the eggs, pushing curds from the edges toward the center for about 2-3 minutes.
  • Continue to cook and stir the eggs every 30 seconds for another 2-3 minutes until soft, silky curds form.
  • Once the eggs are just set, sprinkle with salt and freshly ground black pepper to taste.
  • Transfer the scrambled eggs onto a warm plate and garnish with chopped green onions before serving.

Notes
