Step-by-Step Instructions

  • Begin by preheating your oven to 400°F (200°C).
  • Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes.
  • In a mixing bowl, combine the heavy cream, whole milk, mashed roasted garlic, salt, black pepper, thyme, and paprika. Whisk until well blended.
  • Grease a 9x13 inch baking dish. Layer half of the sliced Yukon Gold potatoes, pour half of the cream mixture, and sprinkle half of the cheese.
  • Add the remaining sliced potatoes, pour the rest of the cream mixture, and top with remaining cheese.
  • Cover the dish with foil and bake for about 45 minutes.
  • After 45 minutes, remove the foil and bake for an additional 20-25 minutes until the top is golden brown and bubbly.
  • Let sit for about 10 minutes before serving. Garnish with fresh parsley.

Notes

Allow the gratin to rest for about 10 minutes after baking to help it firm up, making it easier to serve while still being deliciously gooey.
