Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Cut the butternut squash in half lengthwise and scoop out the seeds.
  • Scatter the peeled garlic cloves on the baking sheet beside the squash and drizzle with 1 tablespoon of olive oil.
  • Season with ½ teaspoon of salt and ¼ teaspoon of black pepper and roast for 35-40 minutes.
  • Cool for a few minutes and scoop the flesh into a mixing bowl.
  • Add the roasted garlic cloves, remaining olive oil, ground nutmeg, almond milk, and butter.
  • Mash until smooth, adjusting seasoning as needed.
  • Transfer to a serving dish and garnish with fresh parsley or chives. Serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. Freeze for up to 3 months for longer storage. Reheat gently before serving.
