Step‑by‑Step Instructions

  • Start by bringing a large pot of salted water to a rolling boil. Add 12 ounces of penne pasta and cook according to package instructions until al dente, roughly 10-12 minutes.
  • In a large skillet set over medium heat, heat 2 tablespoons of olive oil. Add 1 pound of diced chicken breast, seasoning with 1 teaspoon each of salt and pepper. Cook for 6-8 minutes until browned.
  • In the same skillet, add 3 cups of fresh spinach and cook for 2-3 minutes until wilted.
  • In a large mixing bowl, blend together 1 cup of basil pesto and 1 cup of heavy cream until smooth. Stir in the cooked chicken, wilted spinach, cooked penne pasta, and if desired, ½ teaspoon of red pepper flakes.
  • Preheat your oven to 350°F (175°C). Grease a baking dish and transfer the pasta mixture into the dish, spreading it evenly. Top with the remaining mozzarella cheese and ½ cup of grated Parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden brown.
