For the Creamy Sauce

  • 1 cup Heavy cream Creates a luscious texture; half-and-half or coconut cream can be used for a lighter version.
  • 1 cup Chicken broth Adds depth to the sauce; vegetable broth works well if you want a vegetarian option.
  • ¼ cup Grated Parmesan cheese Gives a salty, tangy flavor; nutritional yeast can replace it for a vegan twist.
  • Salt and pepper Season to taste for that perfect balance; consider adding crushed red pepper for a kick.

Cooking Instructions

  • Bring a large pot of salted water to a boil. Add penne pasta and cook according to the package instructions, usually around 10–12 minutes, until al dente. Drain and set aside, reserving some pasta water.
  • In a large skillet, heat olive oil over medium heat. Add diced chicken breast and cook for 5–7 minutes until golden brown and cooked through, reaching an internal temperature of 165°F.
  • Add sliced mushrooms and asparagus pieces to the skillet. Sauté for 4–5 minutes, until tender and colorful.
  • Add minced garlic and cook for an additional minute until fragrant but not browned.
  • Pour heavy cream and chicken broth into the skillet, stirring to combine. Bring to a gentle simmer and cook for 2–3 minutes until slightly thickened.
  • Add the cooked penne pasta to the skillet, tossing gently to coat with the creamy sauce. If too thick, add reserved pasta water.
  • Stir in grated Parmesan cheese and season with salt and pepper to taste. Serve immediately while it’s hot and bubbling!

Notes

Store leftovers in an airtight container for up to 3 days. You can freeze it for up to 2 months. Reheat over low heat, adding a splash of broth or pasta water if needed.
