Instructions

Step-by-Step Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering. Add the diced onion and cook for about 5 minutes, stirring occasionally, until translucent. Stir in the minced garlic and sauté for an additional minute, until fragrant.
  • Add 1 pound of ground beef to the pot and cook for about 6–8 minutes, breaking it apart until browned. Drain any excess fat if needed.
  • Pour in 4 cups of beef broth and bring to a boil. Add 2 cups of elbow macaroni, stir gently, and simmer for 8–10 minutes, or until the pasta is al dente.
  • Stir in 1 tablespoon of Worcestershire sauce, 1 teaspoon of Dijon mustard, and 1 teaspoon of smoked paprika. Mix well for about 1 minute to combine flavors.
  • Reduce heat to low, slowly add 1 cup of milk, and then 1 cup each of shredded sharp cheddar and cubed processed cheese. Stir until the cheese melts completely.
  • Season with salt and pepper to taste, allow the flavors to meld together for another minute.
  • Ladle the hot soup into bowls and garnish with toppings of your choice, like diced pickles, sliced green onions, or crumbled bacon. Serve immediately.
