Ingredients
  

For the Chicken

  • 1 whole chicken (4-5 pounds) ensures a juicy and tender roast

For the Cranberry Sauce

  • 2 cups cranberries fresh or frozen
  • ½ cup pure maple syrup provides natural sweetness
  • ¼ cup unsalted butter melted
  • 2 tablespoons Dijon mustard introduces a subtle tang
  • 1 tablespoon apple cider vinegar adds zesty notes

For Seasoning

  • 1 teaspoon salt essential for flavor
  • ½ teaspoon black pepper adds warmth
  • 1 teaspoon dried thyme for earthy aroma
  • 1 teaspoon dried rosemary complements chicken's flavor

For Aromatics

  • 1 whole onion quartered
  • 3 cloves garlic minced
  • 1 whole orange zest from 1 orange

For Garnish

  • 1 tablespoon fresh parsley optional garnish

Instructions
 

Preparation Steps

  • Preheat your oven to 425°F (220°C).
  • Combine cranberries, maple syrup, melted butter, Dijon mustard, apple cider vinegar, salt, black pepper, thyme, rosemary, garlic, and orange zest in a mixing bowl.
  • Pat the chicken dry and place it in a roasting pan.
  • Apply half of the cranberry mixture over the chicken, rubbing it into the skin.
  • Stuff the quartered onion inside the cavity of the chicken.
  • Roast the chicken for 1 to 1 hour and 15 minutes, checking for an internal temperature of 165°F (75°C).
  • Pour the remaining cranberry mixture over the chicken 15 minutes before it's done.
  • Let the chicken rest for 10-15 minutes after removing from the oven.
  • Carve and serve the chicken, garnished with fresh parsley if desired.

Notes

Pat the chicken dry for crispy skin and mix the cranberry mixture well to enhance flavors.
