Once soaked, drain the beans and set them aside for the soup.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5–7 minutes, or until the vegetables soften and the onion turns translucent.
