  • 1 medium butternut squash peeled and cubed

  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme

  • 2 cups fresh spinach roughly chopped
  • 1 cup shredded cheese such as cheddar
  • 2 tablespoons fresh parsley chopped for garnish

Step‑by‑Step Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Combine the cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper in a mixing bowl. Toss until well coated.
  • Spread the seasoned squash evenly on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat and sauté the diced onion for 3-4 minutes until soft.
  • Add minced garlic to the skillet and cook for an additional minute.
  • Increase heat to medium-high and add ground turkey, cooking until no longer pink, about 5-7 minutes.
  • Stir in ground cumin, smoked paprika, dried thyme, salt, and pepper. Cook for 2-3 minutes.
  • Fold in the chopped spinach and cook for about 2 minutes until wilted.
  • Combine the roasted squash with the turkey and spinach mixture in the skillet and toss gently.
  • Sprinkle shredded cheese over the mixture and cover on low heat until melted.
  • Serve warm, garnished with fresh parsley if desired.

Notes

For best results, use freshly grated cheese instead of pre-shredded for better melting and flavor.
