  • Add the cheddar cheese, chopped spinach, and red bell pepper; mix well.
  • Season with garlic powder, salt, black pepper, and onion powder. Stir to combine.
  • Mix the baking powder with a splash of water to activate, then stir it into the egg mixture.
  • Add the olive oil and mix until smooth.
  • Spoon the egg mixture into each cup of the muffin tin.
  • Bake for 18 to 20 minutes until set and golden on top.
