Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the chopped cooked shrimp, fresh spinach, ricotta cheese, half of the shredded mozzarella, grated Parmesan, garlic powder, and a pinch of salt and pepper. Mix thoroughly.
  • Carefully take each pasta roll and spoon the shrimp and spinach mixture into it. Place the stuffed rolls seam-side down into your prepared baking dish.
  • Spread a layer of the roasted red pepper cream sauce evenly along the bottom of the baking dish.
  • Pour the remaining roasted red pepper cream sauce over the stuffed pasta rolls.
  • Sprinkle the rest of the mozzarella cheese on top of the stuffed rolls.
  • Bake for 30-35 minutes until the cheese is bubbly and golden brown.
