Ingredients
  

For the Meat and Beans

  • 1 pound lean ground beef
  • 8 ounces pork sausage can substitute with turkey sausage
  • 1 can baked beans with sauce
  • 1 can kidney beans drained
  • 1 can pinto beans drained

For the Vegetables

  • 1 medium yellow onion finely chopped
  • 1 medium green bell pepper chopped
  • 3 cloves garlic minced

For the Sauce

  • 1 can condensed cream of mushroom soup
  • 1 cup beef broth can substitute with vegetable broth
  • ½ cup barbecue sauce your choice
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce or soy sauce in a pinch
  • 1 teaspoon mustard Dijon for a sophisticated twist

For the Spices

  • 1 tablespoon chili powder adjust to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper
  • optional crushed red pepper flakes

For the Cheese

  • 1 cup sharp cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded

For the Topping

  • 1 can refrigerated biscuit dough
  • 1 bag frozen tater tots alternative to biscuits
  • optional tablespoon melted butter for brushing
  • optional teaspoon garlic powder for added flavor
  • optional teaspoon smoked paprika for added flavor

For Serving

  • to taste sour cream
  • to taste sliced green onions or chives
  • to taste pickled jalapeños
  • to taste fresh cilantro or parsley
  • to taste extra barbecue sauce or hot sauce

Instructions
 

Cooking Instructions

  • Preheat the oven to 375°F (190°C) and grease a 9 x 13 inch baking dish.
  • In a large skillet, heat oil and brown the ground beef and pork sausage for 6–8 minutes.
  • Add yellow onion and green bell pepper, sauté until softened, then add minced garlic.
  • Stir in spices and cook for 1 minute to toast.
  • Add the baked beans, kidney beans, pinto beans, diced tomatoes, and corn. Mix thoroughly.
  • Combine sauce ingredients in a bowl and pour into the skillet, stir well.
  • Simmer for 5–7 minutes, then adjust seasoning to taste.
  • Pour mixture into the baking dish and sprinkle with cheeses.
  • Layer biscuit dough or tater tots on top.
  • Bake for 25–30 minutes for biscuits or 30–35 minutes for tater tots, until golden.
  • Let it rest for 10–15 minutes before serving.
  • Garnish with sour cream and favorite toppings, serve hot.

Notes

Store leftovers in the fridge for up to 3 days or freeze for up to 2 months. Reheat in the oven.
