Instructions

Preparation Steps

  • In a large mixing bowl, add 8 ounces of softened cream cheese, ½ cup of powdered sugar, and 1 teaspoon of vanilla extract. Using a hand mixer on medium speed, beat the mixture for about 2-3 minutes until it is perfectly smooth and creamy, with no lumps remaining.
  • Gently fold in 1 cup of whipped topping into the cheesecake mixture using a rubber spatula. Be careful to maintain the fluffiness as you combine.
  • In a separate large bowl, prepare 2 cups of mixed fresh fruit. Toss the fruit gently with your hands, ensuring they are mixed well and evenly distributed.
  • Pour the creamy cheesecake mixture over the fresh fruit and gently stir to ensure that the fruit is evenly coated.
  • Drizzle half of the ½ cup of caramel sauce over the fruit and cheesecake mixture. Fold everything together to incorporate the caramel slightly.
  • Carefully transfer the salad mixture into a serving dish or individual bowls for an appealing presentation.
  • Sprinkle ½ cup of granola over the top of your salad, ensuring an even distribution.
  • Finish the salad by drizzling the remaining caramel sauce over the granola and salad mixture.
  • If desired, garnish the salad with the reserved pieces of fruit placed artfully on top.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To keep the granola crunchy, add it just before serving.
