  • Preheat your oven to 350°F (175°C). Gather a 9x13 inch baking dish.
  • In a large mixing bowl, combine 4 cups of diced butternut squash and 2 medium sliced apples.
  • Sprinkle ¼ cup of brown sugar, 1 teaspoon of ground cinnamon, ¼ teaspoon of ground nutmeg, and ¼ teaspoon of salt over the mixture. Toss gently.
  • Drizzle 1 tablespoon of lemon juice over the mixture and toss again.
  • Transfer the mixture into your greased 9x13 inch baking dish and spread evenly.
  • In a small bowl, mix together ¼ cup of melted butter with 1 cup of granola or oats. Add nuts if using.
